Have you ever been to one of those places where you can watch people make fresh pasta after you have ordered it? There is a new Chinese place in Midland, TX called Noodles that does exactly that, and it is fantastic. It is located in a strip mall at the corner of Midkiff and Andrews Highway, and we have been there twice now. It can get really crowded at peak hours, but it is still a great addition to the local scene.
I have had the beef noodle soup in spicy broth, the spicy wonton, the pan-fried bao, and both the pork and beef pan-friend dumplings. Other members of my party have had chow mein and, well, most of the other things on their menu. Once the beef in the chow mein was more tender than the other time, although both dishes were good. This would be an excellent (if limited) place to get dim sum. Service is fast, and it turns out that fresh noodles really are better than the dried kind you buy at the store. I look forward to coming back.
